I have a cd with images for my card making. They are all PDF. Which is fine for just printing, but I would like to edit some of the text. Can I do that and if so how? Would it be possible to convert these to jpg? I have a plan B, but would prefer plan A

Its not going to be easy.
That was why Adobe invented the PDF format. They sold the program which made the PDF files for $900 and gave away the programs which read them (but cannot edit them). So Adobe want to keep selling their $900 program
There are a few free pdf editors, but I have never tried them. Try this

Also could you ask the person who made the originals to send you a Photoshop PSD file instead ?
Or look for other PSD files ?

go to here:
http://www.freepdftoword.org
and convert them to word, in which you can edit, then save back to pdf.

For small images, which I assume these are to fit on cards, it can sometimes be simplest just to display the pdf then use screen capture to snip the bit of picture you want.

Or put a text box containing what you do want on top of the unwanted words?

You can edit .pdf files with Acrobat X Pro which you can get here http://www.adobe.com/products/acrobatpro/features.html
It is expensive though.
