Can Anyone Explain How To Use Hashtags On Twitter?

I tweet a few of my new items via eBid after I've listed them, or re-tweet others' interesting tweets, but I'd like to start adding tweets of my own. I've read in another post that hashtags make a difference. Can anyone explain how and when to use them in a message please?

I always use the # with the word #eBid in my tweets - it highlights any word for searches - click on #eBid on twitter and it will bring up all current posts containing #eBid.

I use #'s the same way I use my key words. for example I'm selling a blue tartan dog coat. so I would now use #'s the make sure it hits it's target market. so:
#Dog #puppy #pet #BlueTartan #Ebid #coat #rain
