There is so much to see in Scotland, you will be spoilt for choice, certainly the drive across Rannoch Moor and through Glencoe can be spetacular if it's fine, very bleak if raining and windswept. The drive alongside the Eastern side of Loch Ness is nice.

I have not done the Glen coe drive before! Went via Oban many moons ago so Will do it this time!
Starting at Edinburgh Will go to see the 4th Bridge (Wifes not seen it) then work my way via Stirling to the bottom of Loch Lomond. Upto Crianlarich up through Glen coe and Fort William then a little of Loch ness then along the A87 through Five sisters Onto the Isle of Skye. Then ack up thought the mainland via Ullapool and Up to eventually Durness.
Please If theres Better Routes and Things I should see then Let me know!

You're certainly going at the right time of year for the salmon leaps. The main activity is October/November.
I'd recommend either the Buchanty Spout or Cargill's Leap, both in Perthshire, if you want to see the salmon swimming upstream.
Cargill's Leap in Blairgowrie is probably the safest option with a four-year-old as there is a carpark by the river and it's flatter. Buchanty Spout is more spectacular but you have to walk down a steep, narrow path to get there and as the best time to watch a salmon leap is after a heavy rainfall, the path can be a tad slippery.
