If you go to My eBid-My stores and select the store to configure, scroll down to Store Name, type in the name you want and update Section 2, it should change the store name. The reason it's showing in your siggy link as new store 1 is because that's the name of your store - eBid gives stores default names - you have to change the name yourself.
