    Default recipie please

    hi all

    does anyone have a simple recipie for broccoli & stilton bake please ....I can find loads for broccoli & stilton soup

    Boil some brocolli, cut some onions, add some other vegetables if you wish, bang it in oven proof dish witha sprinkle of cheese on top, pop in the oven 25-35 mins until brown.

    Hi Kazzi

    slice some washed potatoes into 1cm discs (better if you keep the skin on - better for you too) and put into boiling water for a few minutes to soften, just to start the cooking process off
    same with brocolli, cut into florets and part boil them first

    make a cheese sauce...
    melt 50g butter in saucepan over a low heat, add 50g plain flour and mix, cook for a couple of minutes to bake out the raw flour taste but don't let it go brown
    now add a pint of milk, a bit at a time, mixing well with each bit added.
    if you use a balloon whisk you shouldn't get any lumps
    (if you use slightly more fat to flour you won't get lumps anyway)
    bring to boil, whisking all the time, simmer over a low heat for about 2 or 3 minutes
    add crumbled stilton and melt into the sauce
    add salt & pepper to taste

    now just layer the potatoes and brocolli with the sauce in an oven dish finishing with the sauce and add more cheese to the top (a crushed packet of plain crisps gives added crunch too if you fancy that)

    bake in oven until top is slightly browned

    the longer you have part boiled the veggies first will determine how quickly the dish will cook

    then all is left to do is .... apply to mouth!
