I added a buddy link to my defaults and saved it, but it's not showing on any of my listings.
Also it wouldn't let me save it unless I chose a postal service which is awkward because some of my listings are domestic and some international.

Your defaults are only used when you select them to populate new listings - they don't appear magically on existing listings. This also explains why the postage thing doesn't matter - just set your most common values in the default, and correct as you make the listings where necessary.

Does it not show even if you populate from your defaults?

If you want it to appear in every new listing then you need to tick the Use when listing new auctions? box on the default set.

Your can create more than one default set. I have one for Europe and one for International. I set the postage on all to zero and amend when I create each listing.
